Tidak pernah kata tidak dengan butter cake / kek mentega, lebih suka yang begini daripada kek hispter yang ada sekarang. Walaupun dalam kategori kek jadul (jaman dulu), kek mentega sentiasa digemari dan masih releven hingga kini, pelbagai versi resepi yang ada turut menentukan hasil kejadian kek mentega. Ini saya cuba guna resepi daripada kids baker Danish Harraz dan hasilnya sangat memuaskan hati.
Paddle Pop Butter Cake

Bahan-bahan
1 buku butter (jika guna unsalted, sila tambah secubit garam halus ke dalam bahan kering)
5 biji telur gred B
1 1/4 cawan gula halus
2 cawan tepung naik sendiri
1/4 cawan susu segar
1 sudu teh essen vanilla
Pewarna makanan kegemaran (saya guna - biru, kuning, hijau)
Cara Penyediaannya
* Panaskan oven pada suhu 160'C. Gris atau alas tray 8x8 dengan parchment paper.
* Jika guna bundt pan, sapu pan dengan butter dan tabur dengan sedikit tepung (ketuk keluar lebihan tepung).
* Pukul butter dan gula halus hingga putih, masukkan telur sebiji demi sebiji (pastikan telur sudah sebati baru masuk sebiji lagi dan seterusnya).
* Pukul hingga fluffy, masukkan esen vanila dan perlahankan mixer.
* Masukkan tepung berselang seli dengan susu segar. Mix rata tapi jangan sampai overmix (jika tidak kek tidak jadi moist malahan mengeras). Tutup mixer.
* Tuangkan ke dalam loyang (untuk buat butter kek plain).
* Jika ingin yang paddle pop, bahagikan adunan kepada 3 bahagian dan titiskan 1 warna untuk setiap 1 mangkuk dan kacau rata.
* Sendukkan adunan ke dalam loyang berselang seli warna hingga adunan habis.
* Bakar selama 40-50 minit, terpulang pada jenis oven, tapi jangan terlebih bakar.
*Bila sudah cukup masa, cucuk tengah cake untuk pastikan cake masak sepenuhnya dan tiada cecair melekat pada penyucuk kek.
* Sejukkan sebentar dan hidangkan.
Bila dah bermain warna baru perasan kenapa tiada warna merah? Jadi lah sesuai dengan tema alam sekitar kebetulan sebab kami nak bawa sebagai bekalan ke taman negara.
